What Vanilla in a Perfume Usually Is
Natural vanilla comes from cured pods of the vanilla orchid, and its scent is dominated by one molecule: vanillin. Perfumers use vanilla absolutes and extracts, but most of the vanilla effect in modern perfume comes from vanillin and related synthetics such as ethyl vanillin, which are chemically consistent, affordable and long-lasting.
Synthetic vanillin is the same molecule as the vanillin in the bean. The natural extract adds hundreds of trace compounds that give it depth — darker, woodier, sometimes smoky — which is why the most expensive vanilla fragrances often lean on real absolute alongside vanillin.
