What Iris Smells Like, and Why It Costs So Much
The iris in perfume comes from the rhizomes of Iris germanica and Iris pallida, not the petals. The roots are dried for five years or more before extraction, and one ton of root yields about two kilos of essential oil, known as orris butter — making it, by Wikipedia's account, the most expensive substance used in the fragrance industry.
The smell is hard to pin down: powdery and cool, sometimes carroty or earthy, sometimes like cosmetics or suede. Many iris perfumes pair it with citrus and incense to lift it, or with woods and vanilla to warm it.
